Chocolate Muffins with White Chocolate Chips Recipe

Ingredients:
In a bowl:
250 gr plain flour
50 gr coco powder
2 tsp baking powder
100 gr white chocolate chips (optional)
In a jug:
2 eggs
150 gr sugar
4 tbsp oil
200ml milk
Method:
Preheat the oven to 160o C or 140o C fan.
Sieve the flour with the powders (mix 1) into a bowl.
Mix the eggs, the milk, the oil and the sugar together in the jug.
Pour the egg mixture into the bowl (add chocolate chips if using to make double chocolate muffins, this recipe uses white chocolate chips) and mix until combined but still lumpy.
Spoon mixture into cake cases (or silicon ones; I usually use those ones) and put the tray in the oven at 160o C, for 20 – 22 minutes, until set and cracked on the top. If the muffins are not quite set, put back in the oven for 5 – 10 more minutes. You can use a skewer to check if has been baked all the way through.
Once muffins are baked perfectly, leave them to stand for 5 minutes and then you can just… enjoy!
