Paris’s Super Tasty Greek Orange & Chocolate Cake

Recipe ingredients

120 grams of seed oil – we used sunflower oil
2 oranges (organic if possible – whole and unwaxed)
240 grams of orange juice – fresh if you can
2 large eggs
2 pinches of salt
400 grams of plain flour, sifted
300 grams of sugar
1½ tbsp baking powder
1½ tbsp baking soda
200 grams of chocolate drops, plain or milk to taste

This is a lovely, juicy Greek cake with whole orange and chocolate, perfect for the summer. 

Method

1. Preheat the oven to 160 degrees C/350 F/Gas Mark 4

2. Butter and flour a large cake tin, in the picture above we used a Bundt Tin.  

3. Cut the oranges (after washing them) in half and then each half into 4 pieces. Then     take a sharp knife or scissors and remove the white fibers and pith that join the orange segments together. Remove the skin too.

NB: for extra orange flavour zest one or both of the oranges and include the zest when mixing the cake ingredients together.  

4. Put the orange segments in the blender with the oil, the juice, the eggs and the salt then blend together until a creamy texture is achieved.

5. Put the flour, sugar, baking powder and baking soda into a separate bowl and mix with a spoon. 

6. Make a depression in the centre of all the dry ingredients and add the creamed liquid ingredients. 

7. Stir the wet and dry ingredients gently, just to combine and not over work the mixture to achieve a fluffy result.

8.   Add the chocolate drops or pieces to the orange cake mixture and stir gently. 

9. Pour the mixture into the cake tin and bake until golden brown that will take about 1 hour. 

10. Check to see if the cake is fully baked by inserting a knife or skewer into the centre of the cake. When baked, it comes out clean. 

11. Cool and Enjoy!
