Stathis' Rice Pudding

Ingredients:

1/2 cup carolina rice or arborio (for risotto),

2 cups water,

1 litre of milk,

110 grams of sugar

4 tablespoons corn flour,

Two vanilla

a little salt.

Method:

1. First, boil the rice with water. Once the rice "drinks" the water, leave it aside. If we boiled it in milk, it would take more time, while now our rice is ready.

2. Pour almost all the milk (keep aside about half a cup where we dissolve the corn flour), and add the sugar and salt.

3. Simmer the milk and add the cooked rice.

4. Stir with a wooden spoon so that it does not stick to the bottom for about 5-6 minutes until the rice is cooked and has absorbed the milk.

5. When it is ready, remove from the heat and add slowly, stirring the corn flour.

6. Put the pot back on the heat for 2-3 minutes and the rice pudding is ready.

7. Remove from the heat completely and divide into 6 bowls.

8. Serve with cinnamon (optional). It is better to sprinkle the cinnamon when we offer it, otherwise it will get wet and will not have a nice feeling in the mouth.
